Wheat-Free Chocolate Peanut Butter CookiesOne of the newer treats in our house is Wheat-Free Chocolate Peanut Butter Cookies. I only made them because I got lazy last week and instead of making my own peanut butter, which I like to do, I purchased an all-natural peanut butter at a local farmers market.

When I got around to opening the purchased peanut butter I was a little unhappy with the amount of oil that had separated from the nuts. I could have just added more peanuts and made it to the consistency that I like but I decided to make cookies instead.

Because I avoid wheat and do not keep wheat flour in the house, I turned to coconut flour and it worked out very well. You can use regular flour if you use wheat products I guess, but I will admit I have never tried to make a batch that way.

I am lucky if I actually get to taste one cookie because once they cool, my wife takes them to the farm where there are a few nephews and nieces that love to get any sweet treat. They will finish off a couple of dozen cookies almost before the plate reaches the table. So here is the recipe.

Wheat-Free Chocolate Peanut Butter Cookies

Ingredients
  • 1 cup salted natural peanut butter, (add ½ teaspoon salt if unsalted)
  • ¼ cup coconut oil
  • 2 tablespoons coconut flour
  • ¼ cup natural honey
  • 4 farm fresh eggs
  • ¼ cup cocoa, unsweetened
Instructions
  1. Preheat oven to 375 degrees Fahrenheit.
  2. Combine peanut butter, coconut oil, coconut flour, honey, eggs, and cocoa - stirring until thoroughly mixed.
  3. On a parchment lined cookie sheet, drop the dough with a spoon, leaving a little space between each spoon of the dough.
  4. If you want crisscross decorations, take a fork and dip fork prongs in water. Press into cookies, twice, 90 degrees apart.
  5. Bake for 10-12 minutes; making sure not to over bake.

 

I think that I actually bake cookies with the family in mind because I prefer to satisify my sugar needs from all the fresh mangos, papayas and bananas we grow here on our property. About the only fruit, I ever purchase is organic blueberries, raspberries, and blackberries, but how I bake with them is another story for another time.

Creamy Poblano and Corn Soup

Creamy Poblano and Corn SoupI want to take a moment and share a recipe with you because my wife and I enjoyed it so much that I think it should be shared. Creamy Poblano and Corn Soup is so good that it can be a meal all by itself. Well maybe along with a warm baguette served with farm fresh butter. Actually, my wife almost never eats bread and she did not eat the croutons in the soup but she did manage to eat half of the baguette. It is like dipping donuts into coffee it just works well with this soup.

Creamy Poblano and Corn Soup

Ingredients
  • 4 ears sweet corn, uncooked
  • 4 roasted poblano peppers
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter, divided
  • 1 sweet onion, diced
  • 3 garlic cloves, minced
  • 1 teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • 1 cup low-sodium chicken or vegetable stock
  • ⅔ cup half and half
  • small toasted bread croutons for garnish
Instructions
  1. To roast corn, preheat the broiler on your over. Brush corn with olive oil and a sprinkle of salt, then place on a baking sheet. Broil for 15-20 minutes, rotating until golden brown. Remove from oven and set aside. Roast peppers on an open flame on your stove turning as the skin blackens. Remove from the flame once the pepper skin is pretty well blackened all arounf the pepper. Wrap the peppers in a towel and set them aside for a few minutes. After about 15 minutes, remove from towel and peel off the blacken skin. Slice open, remove seeds, Once corn has cooled, cut it off the cob into a bowl. Cut peppers into chunks and add to the corn.
  2. In a large stock pot, add olive oil and 2 tablespoons of butter. Once hot add in onion and garlic along with salt and pepper, stirring to coat. Cook on medium heat for 5 minutes until softened. Add in peppers and corn, stirring to combine well, then add in chicken stock and ⅓ cup half and half. Bring to a boil and continue to stir for 5 minutes, then turn off heat.
  3. Carefully transfer hot soup to a high-powered blender, cover tightly to avoid splashes and puree until smooth.(or use an immersion blender if desired) Place back in the pot and turn heat to medium-low. Stir in remaining butter and half and half, then let cook, stirring occasionally, for 10 more minutes. Serve immediately topped with croutons if desired!

 

 I ate the croutons because my wife was keeping the Baguette all to herself. As fall weather starts to ease in on us, it is time to find new and exciting soups to serve. It is also the time when all those wonderful non-GMO vegetables are available at your local farmers markets, or in some cases, in your own garden. Start thinking soup. It can be a complete meal, and oh so delicious.

Home School Cooking Classes

Home School Cooking ClassesI have found something that I just have to share with you. If you Home School, here is a cooking class that will not only teach young people to cook but it can be part of their school learning. How cool is that? Well for a chef like myself, I think it is so cool that I became an affiliate as soon as I checked out a few of the classes.

I got my start in the kitchen when I was about 9 by making lunches for the other kids in a foster home I lived in. It served me well in picking a career that has lasted a lifetime. Even if your students do not wish to become chefs, they will still need to be able to cook when they leave home and go out on their own.

Teach them now and you have a chefs-helper in your kitchen until they do leave and go out on their own. And if you are as busy as most home school teachers, the extra help will be a blessing for years to come.

Guide to Common Coffee Roasts

Did you know that coffee beans are usually stored when they’re green? They’re stored this way in order to maintain freshness and quality prior to roasting. It’s the roasting that brings out the aroma and taste you love. Roasting uses high temperatures in order to bring about the chemical changes necessary to produce the desired taste when brewed. Roasts can be divided into four main categories. These are light, medium, medium-dark and dark. A bit of trivia you may not realize is that it’s the light roasts that actually have a higher concentration of caffeine than the darker ones. This guide to common coffee roasts will give you a basic understanding of each category and the types of coffee in each.

Light Roasts: This type of roast usually yields a milder, more subtle flavor. The outer surface is dry due to the fact that the roasting process is not long enough to break the bean down. Sometimes the flavor can be a bit sour, and such beans will be used in less expensive coffee blends. Common names for lightly roasted coffees include Cinnamon, Light, Half City and New England.

Medium Roasts: A bit stronger in flavor with a medium brown color, these roasts yield a bean that also has a dry surface. A bright, crisp and fully developed flavor is offered by medium roasts. A favorite of many U.S. coffee drinkers, you’ll find American roast in this category. Breakfast, Regular, City and Medium also fall into this group.

Medium-Dark Roasts: These roasts have a slightly oily surface and dark in color. They have a rich body and a sweet taste. You’ll find Full City, Continental, Viennese and Light Espresso among medium-dark roasts.

Dark Roasts: The final roast category is generally bittersweet in flavor with a black, shiny appearance. Low in acidity, these roasts have a broad variety from dark all the way to charred, losing acidity as darkness increases. Common names are French, Italian, Neapolitan and Spanish.

If you’re an experienced coffee drinker, you may know which roast is your preference. Those new to the beverage may wish to explore. Because there are so many varieties in types of coffee roasts, it’s always a good idea to try something new.

Here is today’s coffee recipe:

Coffee Imperial

4 cinnamon sticks
6 cups strong brewed coffee
½ cup heavy cream
Sugar, to taste
Crushed ice
Whipped cream
Cinnamon

Place cinnamon sticks into hot coffee and let stand for about an hour. Remove cinnamon sticks. Add sugar to your taste preference. Store in refrigerator until chilled. Pour into tall glasses with ice. Add whipped cream and a sprinkle of cinnamon to the top if you wish, then serve.

Gourmet CoffeeIs Gourmet Coffee Worth the Investment? Well I guess that depends on a could of things, the first being a question of funds, do you have the extra coin it requires, and the second is how much coffee do you drink and I guess the third is do you really love your coffee.

As you probably know, There’s coffee and then there’s gourmet coffee. There’s a big difference between regular coffee and gourmet coffee – besides the cost. The price is usually the first thing about the coffee that gets everyone’s attention because they can range from mildly expensive to very expensive.

Some coffee drinkers often wonder if buying gourmet coffee is worth the investment. But die-hard coffee lovers know that the answer is a resounding yes. It’s the difference between the two kinds of coffee that makes it worthwhile.

To start with, gourmet coffee isn’t made the same way that regular coffee is. Gourmet CoffeeEverything from the first harvest to getting it into your hands has a higher quality level than regular coffee does.

The beans are roasted using a better process, the flavor is richer and the quality superior. One of the reasons for this is that producers of gourmet coffee carefully watch the coffee to protect it from over-roasting.

They also don’t practice the habit of mixing lesser quality beans in the coffee like some regular coffee companies do. All the extra effort that goes into creating gourmet coffee is why it translates into a higher cost.

These coffees are known as specialty coffees and they can be created in different coffee growing areas just like regular coffee can. You’ll also find that these coffees are packaged with different types of roasts.

These roasts are made with a higher quality coffee bean and then prepared as a light, medium or dark roast. The more difficult it is to grow the brand of gourmet coffee, the more expensive it’s going to end up being.

Another thing that can affect the cost is determined by any extras that have been included in the production of the coffee such as flavors. Each gourmet coffee will have a different richness, texture and will affect your palate more strongly than others will.

You get this rich flavor due to the higher quality of Arabica beans used for the coffee. Despite the expensive beans and methods used in the making of these gourmet coffees and the cost to consumers, the buying market remains strong for them.

The reason that these coffees are in demand and will continue to be in demand is because the consumer desire for them continues to grow rather than wane. Coffee drinkers understand that they deserve to have gourmet coffee and that it’s a great tasting treat.

Unlike regular coffees, gourmet coffees are not mass produced in the same portions. Instead, they’re made using smaller yields. Gourmet coffee is worth the investment – whether you’re buying it from a coffee shop to enjoy while you’re out or buying it for home use.

A couple of things to consider. One, coffee beans are like grapes for wine, each season needs to be addressed and there are coffee “experts” that travel to the coffee plantations each year and taste the different beans of that harvest before they commit to purchasing. If it has been a bad year for the beans and the taste is off, they will be sold to a lesser market.

Gormet CoffeeSecond, you want to buy from a Coffee shop that roasts it own beans. An example is a little coffee shop in Racine, Wisconsin called Wilsons Coffee. The family has been in the coffee business for years. Every year the son travels to the many plantations around the world and makes the taste tests. Once they have found the beans they will use and the beans arrive, the roaster is right in front where you can watch the beans being roasted. When we owned our coffee shop we always bought from Wilsons because we would order our coffee for the weekend, (about 20 to 25 pounds) on a Wednesday. They would roast it on Thursday and we would pick it up on Friday. Needless to say, we had a great following at our coffee shop.

Now that we live in Puerto Vallarta, we have a coffee roaster that deals with beans that he harvests himself from the growers that are between here and Guadalajara. He knows the right time of the year and his beans are roasted in small batches. The coffee is so good that we have friends in the states that always requests a kilo or two when we travel north.

If you have been asking yourself Is Gourmet Coffee Worth the Investment, I would suggest you try a pound at a time until you have that Aha moment. But be sure to purchase it from a small coffee shop where they test the beans before they buy and they roast in small batches. The price adjustment is really not that much because you know that you are worth the best.

Peppermint Patty Coffee

8 ounces coffee
2 tbsp. cocoa mix
½ tsp peppermint extract
2 tsp sugar
2 ounces milk

Place dry ingredients in mug, then slowly pour coffee over top. Stir until cocoa mix and sugar are completely dissolved. Add peppermint extract and milk, and then stir until well blended.

Coffee Versus Tea – Is One Better

Coffee versus TeaCoffee Versus Tea, that has long been a question in my house. For years I drank only coffee, I really did not care for tea except for iced tea that was loaded with sugar and a little mint. Then about 8 or 9 years ago, for whatever reason, I switched and started drinking a large (16 0z.) cup of Green tea to start my morning. I usually add the juice of a fresh lime and sometimes an ounce of aloe. Later in the day, I will grab a cup of coffee.

Now once again I am starting to enjoy coffee more.  There are so many choices and so many different recipes that it can be almost a hobby. I am going to share some of the recipes with you, one or two here and a bunch more if you are on our email list. Hope you – Which Should You Drink?

Most people have a beverage preference of tea or coffee. Sometimes, people will drink both, but they always favor one over the other. Each of these beverages offers some health benefits, but one of them is healthier for you to drink.

Tea has a lot of antioxidants, which means that it can help your body fight off Coffee versus Teaany inflammations or infections. Coffee also has antioxidants, but unlike tea, it contains more nutritional benefits.

It contains more nutrients and minerals that help your body fight off diseases and boost your immune system. Tea is good for the heart. It can help your arteries by preventing the accumulation of buildup that leads to heart attacks.

Coffee does the exact same thing. If you drink green tea – especially if you have a heavy green tea habit – the beverage can cause you to become dehydrated. Coffee doesn’t have the same side effect even though the caffeine in both beverages is considered by some to be a diuretic.

The truth is that neither beverage is a diuretic. If you find yourself having to urinate more after having coffee or tea, it’s only because of the increase of fluids in your body.

You’d have the same reaction after drinking water. Both coffee and tea can help you keep memory loss at bay. Both can give you energy, but coffee gives you more than tea does.

Coffee versus TeaPeople who drink coffee not only have large doses of antioxidants, but they also gain protection from certain diseases like cancer or type 2 diabetes. Both coffee and tea can improve the glucose levels in people who are diabetic.

At first glance, it appears that coffee and tea run neck and neck for all the good health benefits that either one can offer you. But there is one vital difference between coffee and tea consumption.

Tea contains something called tannins. This is a polyphenol, a kind of natural chemical. Depending on the type of tea that you drink, you can end up with a lot of tannins in your beverage.

What is known as a healthy tea, green tea, has one of the highest amounts of tannin. This chemical acts to block the body from absorbing the iron in the foods that you eat. Now perhaps you feel that this is not a problem, however, if like me, you enjoy a glass of wine with your meals that changes things. Both White and Red wine contain tannins at various degrees. The Reds have much more than the whites. Now if you are sipping tea throughout the day and then enjoying a glass or two of wine in the evening, you might just be getting too much tannins. Why is it a concern?

It can cut your absorption rate by as much as 50% if you have a glass of tea along with your meals. That’s why people who drink tea often end up with low iron and some go as far as to end up with anemia.

Coffee doesn’t have this same impact. So when it comes coffee versus tea,choosing a beverage that tastes great and is healthy for you, it appears that coffee is the better choice from health standards. Maybe not by much and I am sure that tea drinkers will disagree with me, but that is the conclusion I have come to based on the research I have been able to do.

To get things started, here is a recipe for a Fancy Italian Coffee.

Fancy Italian Coffee

3 cups strong black coffee
1 cup milk
1 tbsp. light brown sugar
Whipped cream
Ground cinnamon

Add coffee and milk to a large sauce pan, and bring to simmer over medium-high heat. Moisten just the top edges of four coffee mugs with water, and then dip into a shallow dish of brown sugar. Pour coffee mixture into mugs. Place whipped cream on top with a dash of ground cinnamon to garnish, if desired.

I am fighting Bronchitis while at the same time I am involved in reviewing and improving my goals for the coming year.  I like to make a review in the spring and the fall to avoid the New Years rush. I believe that as we age, reviewing our goals and adding or subtracting short-term goals should be addressed twice a year.

As the Candle gets shorter, and it does, we need to make sure that we are still enjoying life and not just wandering through it. Remember the words to the song by Mac Davis? You’ve got to Stop and Smell the Roses, Well when was the last time you did just that.

When You review some of your goals and one goal is rejuvenating the body, mind, and spirit, the method should be smaller, more frequent snacks and meals. This will help keep energy levels on an even keel and regulate your blood sugar levels to avoid spikes and dips. When you choose the right combination of foods, your body gets the much-needed boost it needs to sustain itself properly, even through those slumps later in the day. So dump those high sugar junk foods and reach for the following foods and get that boost you need.

Any fresh fruit, especially with skins or seeds like peaches, apples, pears, Superfoods to Rejuvenate Body, Mind and Spiritoranges, and strawberries, is a great source of vitamins and fiber. In the summer you can choose a peach and get plenty of dietary fiber, niacin (vitamin B3), potassium, beta-carotene and vitamin A, plus high amounts of vitamin C. Raisins are a healthy, low-fat, low-cholesterol, and low-sodium snack with significant amounts of potassium, phosphorus, copper, and iron, and when mixed with low-fat yogurt, you also get riboflavin (vitamin B2) and vitamin B12, as well as a high amount of calcium, which is needed not only for strong bones and teeth but also plays a key role in the normal functioning of the heart and other muscles.

Baby carrots and sesame sticks are a tasty treat that will provide significant amounts of beta carotene, vitamin A, vitamin C, folate, vitamin B6, iron, potassium, copper, and fiber. Beta carotene helps protect against diseases like heart disease and some cancers.
Vitamin A is important for healthy skin, for better night vision, and to fight infection and respiratory ailments. Folate, or vitamin B9, is essential to human life, helping to form red blood cells and break down proteins, and playing a key role in cell growth and division.
