About The Chef So who is Chef William and what is this blog all about? Good question and one that I would ask if I just discovered this blog.

To state with I am a retired Executive Chef that has spent his whole life in a kitchen..It started when I was put into my first foster home. I soon learned that those that work in the kitchen get the best food. I was seven years old and l think my first love affair was with food. We have never drifted apart in all the years that followed.

I liked working with food, learning to cook as well as working with cold foods. I remained working in kitchens for the rest of my working career. I went to school to learn how to cook and I spent the last 23 years of my career as an executive chef.

It has not always been that way. When I was working a day to day job, I did not take very good care of myself. Although I was preparing healthy meals for others I let myself go in the wrong direction.

By the time I reached retirement age I weighed 336 pounds which is not healthy for my 6 foot frame. Once I retired and got out from spending all my working hours dealing with food I started trying different diets to lose weight. I will admit it was only kind of a half-hearted effort most of the time but I did loose a little weight along the way.

That all changed this past year when I as diagnosed with prostate cancer. I visited 4 cancer doctors, was offered 4 different “cures” all of which involved a knife of some type, Chemotherapy and radiation treatment. I went home to do some research and find a more non-invasive treatment. I studied the holistic approach and almost every cancer doctor in every holistic hospital or spa, recommended a ketogenic lifestyle as part of their treatment.

I started eating a keto diet. My weight has “adjusted” from 336 to 248 at this point and is still adjusting. I believe I will drop another 50 pounds during the year and my cancer will be history. I do keep up with follow up check ups and advice from holistic doctors, one of which is at the Holistic Bio Spa here in Puerto Vallarta, Mexico.

There are other good food plans you can follow for a whole foods healthy lifestyle including the Paleo diet, a low-carb diet and the Mediterranean diet and a lot of the recipes for these food choices are also gluten free. The main focus of this blog in the ketogenic diet/lifestyle but I do share recipes for those other diets as well.

I focus on eating fresh Whole Foods, grass fed beef, free range chicken and wild caught Fish. My Plate is colorful, mostly plant-based, with a focus on whole, real ingredients that I can pronounce. While I do not have a gluten problem that requires me to live gluten-free, I’ve found that gluten and most dairy-based foods don’t make my body or mind feel good, so I don’t eat them. It takes a little research but I prioritize the quality of my food and want to know where it comes from and under what conditions it was grown.

Foods becomes our fuel and our building blocks. We are what we eat and if we are to enjoy life we should eat only the best that nature has to offer. It is up to us to make wise choices. That is what this blog is about. I want to share with you what I have learned along the way as well as some great tasting recipes.
