Healthy Mayonnaise

  • 1 egg yolk
  • 3 tbsp apple cider vinegar
  • ½ medium lemon juiced
  • ½ tsp sea salt
  • ¼ tsp turmeric
  • ¼ tsp sweet paprika
  • ¼ tsp garlic powder
  • ¾ cup avocado oil
  1. Add the egg yolk, vinegar, lemon juice, sea salt, turmeric, paprika, and garlic powder to a blender or food processor,
  2. Blend until completely mixed, about a minute.
  3. Continue blending while adding the oil one tablespoonful at a time allowing it to emulsify before adding the next tablespoon of oil. Continue until all the oil has been added.
  4. Once you have added all the oil and it is emulsified remove from the bender and store in a clean glass container. Cover and refrigerate.
  5. It will keep for up to two weeks.
