Keto Friendly Cauliflower Spinach Chowder

 

Well it is that time of year when we start making more soup to enjoy. We are kicking it off with a simple Keto Friendly Cauliflower Spinach Chowder.  I do wish that I had the time to share every keto soup recipe with you but as some of you know we are building a ranch in the mountain area just overlooking the Bay of Banderas about 15 miles outside Puerto Vallarta, and that is taking up a lot of our days.

I am creating a small backlog of the recipes for the foods we are enjoying during the building process. We make a lot of it up at the construction sight on make shift cooking equipment like a very small grill and a table top burner. We must spend a lot of time there plus we have a three man building crew and a night watchman so we like to cook extra.

Yesterday I make a “Rocky Road” style fat bomb in mini so that you could enjoy tiny bites and only eat one or two when you need to bump up the fat intake just a wee bit. I will try to get that recipe posted just as soon as I can get a picture, which should be sometime today.

Today I am making a poblano pepper based salad dressing so that I can take some mason jar salads on the mountain this week end. That recipe is also almost ready to share. These are just a few of the recipes I will be sharing as time permits.

Keto Friendly Cauliflower Spinach Chowder

Ingredients
  • Ingredients
  • 1½ cups free range chicken broth (or veggie broth)
  • 1 head of cauliflower (cut into small pieces)
  • 1 cup organic baby spinach, sliced into smaller pcs.
  • ½ cup diced white onion
  • 2 tbsp grass feed butter
  • 1 tbsp minced garlic
  • ½ pound cooked crumbled bacon (for topping)
  • ½ cup shredded cheddar cheese (for topping)
  • Himalayan salt to taste
  • Freshly ground black pepper to taste
Instructions

  2. In a large pot, add the farm fresh butter and onions and sauté until clear. Add the minced garlic and sauté for an additional minute.
  3. Add the chicken broth, seasoning and cauliflower to the pot and simmer for about 15 minutes or until the cauliflower is slightly tender.
  4. Carefully pour half or more of the mixture (along with half the spinach) into a blender and pulse a few times until creamy.
  5. Place back on the heat, and add the remaining spinach as well as about a cup more chicken broth, depending on your consistency preference.
  6. Simmer for about 10 more minutes or until the cream cheese is melted and blended nicely.
  7. Top with crumbled bacon and shredded cheese, enjoy!

Soups are the main stay during the cooler days because I can control the carbs very easily once I have completed making the soup. There is a tendency to add some left overs” when making soups and if you do that you will need to adjust the micros if you are following a ketogenic lifestyle.

Remember, The way to enjoy the ketogenic lifestyle is to keep it simple. Good food without to much time in the kitchen. Choices that make you happy while staying as close to a whole food menu as possible, and adding a little fun exercise to keep the body working well.
