I need some dessert after waiting in unstoppable rain for two days for a Hurricane that decided to make landfall about 100 miles upline from where we live. A simple but healthy meal to enjoy after the morning chores that include feeding our family of chickens, ducks, turkeys, dogs, cats, a parrot and a couple of song birds would probably be the right choice but for right now it is dessert and what better than a Keto Friendly Chocolate Mug Cake.
I am taking a small step back from social media and life online as we build our ranch home in the foot hills of the Srerra Madre Occidental Mountain range just a little north of Puerto Vallarta. My wife and I have been purchasing parts of the property over the past 15 years and now that is complete and we are in the building stage. This stage of the project is expected to take between three and six months. We will be moving into our new woodland home in about three months which gives us time to walk together each day among the trees around the building area while we allow our minds to adjust to a slower pace of life, more spacious and more true to our retirement plans.
So the keto kitchen comes to farm life. It is earthy, with unprocessed foods for the most part, true to the origional goals of this website. Don’t worry, I will still be sharing some great recipes including fat bombs and keto ice-cream but I get the feeling that the recipes will be more Mother Earth News than Gourmet Magazine. Let’s watch together as it unfolds. It’s a slow and seasonal unfolding as we raise much of our own foods. I feel this will allow whatever is coming next to do so in the best way possible. Living closer to nature is at the heart of the process. I will share more as it unfolds…This week it is pulling 800 meters of electric cable to bring electricity to the property. That is a do it yourself project around these parts.

Keto Chocolate Mug Cake
- Serves: 1
- Serving size: 1
- Calories: 405
- Fat: 24.3
- Carbohydrates: 12.7
- Fiber: 6.1
- Protein: 9.9
- 1½ T. coconut flour
- ½ t. baking powder
- 1¾ T. unsweetened cocoa powder
- 2 T. unsalted farm fresh butter
- 1½ T. low carb sweetener of choice*
- 1 Farm fresh egg
- 2 T. heavy cream
- ¼ t. pure vanilla extract
- ¼ t. Himalayan salt
- Fresh sliced strawberries, to serve
- Add the first three ingredients to a small mixing bowl and stir to combine.
- Melt butter in a small bowl in a microwave for several seconds. Add low carb sweetener and stir until completely dissolved. Add egg, heavy cream, vanilla extract, and salt to the butter mixture and whisk to combine.
- Add wet ingredients to the dry and stir until thoroughly blended. Pour blended mixture into mug or small microwave-safe container and microwave on high for 1 minute.**
- Remove from microwave and serve immediately with fresh sliced strawberries, if desired. Enjoy!
Now the calories may seem a little high at first but consider, we or at least I do not eat dessert very often. Most of the calories are coming from farm fresh butter which is a good fat and we are making only one so there is no change that we will eat more than one without thinking about it first, Then shame on us if we do.
Now I need to get on the internet and see if I can find copies of the old TV show “Green Acres” as that is a little like what this adventure is going to be except I am the one that misses the city life and my wife is the down to earth farmer.
The way to enjoy the ketogenic lifestyle is to keep it simple. Good food without to much time in the kitchen. Choices the family will love. Staying as close to a whole food menu as possible, and adding a little fun exercise to keep the body working well.
